注目トレンド: 抹茶


この緑茶の粉末はネットで話題沸騰中。 そして抹茶は期待を裏切りません。 完璧なミントとキュウリの抹茶クーラーを作りま。


緑茶パウダーは繊細な風味があって、栄養面で素晴らしい利点があるの。 抗酸化物質が豊富でアミノ酸L-テアニン(鎮静効果が高い)を含み、体に負担なく元気が出るのよ。



私は朝の抹茶が大好きで、特に一日の始まりに落ち着きたい時(実際ほとんど毎日)にいいわね。 温めたアーモンドミルクと良く合うし、暑い季節にはこの抹茶クーラーが最高。  これほどリフレッシュできるものはないわ、特に午後の元気を回復したい時に。 ちょっとしたおやつにしたいなら、残りをアイスキャンディーの型に入れて凍らせるの。期待できるわよ。



ミントとキュウリの抹茶クーラー  (4人分)
オーガニック高級抹茶 小さじ3

オーガニックのキュウリ 2本 乱切り

レモン汁 80 ml(レモン約2~3個分)

メープルシロップ 大さじ2

レモンとキュウリのスライス(お好みで)



ミントの単シロップ

フレッシュミントの枝 小1本

グラニュー糖 170 g

グラニュー糖 170 g


小さいボウルに、小さじ3杯の抹茶を入れる。 固まりがあれば泡立て器でつぶす。 約280mlのお湯を加え、よく混ぜて軽く泡が立つくらいまで泡立てる。 火から下ろして冷ます。

単シロップ: 小さいソースパンにミント、グラニュー糖、水を入れる。 沸騰させてから火を止めて冷ます。 ミントの葉を漉す



キサーに乱切りにしたキュウリ(皮つきでOK)を入れ、作動して液状にする。 細かい目の漉し器かガーゼで漉す。  出来るだけ多くの水分を出すこと。

ピッチャーに抹茶、キュウリ汁、レモン汁、メープルシロップ、冷ましたミントの単シロップ80mlを入れて混ぜる。  氷を入れてレモンとキュウリのスライスを添えて供する。

*  一度に飲み切れなければ、冷蔵庫で3日間持ちます。

Gisele Bündchen's Six Clean-Eating Rules

With her own organic vegetable garden, greens at every meal and a strict cleanse twice a year, Gisele Bündchen is the ultimate healthy-living guru. For Vogue Paris, the supermodel and her family's nutritionist and chef, Allen Campbell, lift the lid on the dietary regime that helps Gisele maintain her reputation as the cleanest-living model in the world.

(Rules 1 ) A vitamin-packed breakfast
To kick off the day with a flying start, the Bündchen family eat a breakfast packed with fresh fruit and vegetables. "Around 6am, we face the day head-on with a glass of warm water and pressed lemon to balance the body's alkaline levels and kick-start the digestive system. We'll follow this up with a revitalizing herbal juice and super-vitamin smoothie, made in a blender with organic fruits. Later in the morning, we'll have brunch with fresh fruit, eggs, avocados, gluten-free bread and coconut butter. At the weekends, Tom likes to indulge in oatmeal pancakes and my son, Benny, loves them."


(Rules 2 ) Plenty of fruits and vegetables
As well as juices and smoothies, Gisele likes to make seasonal fruit platters to snack on, combining a variety of fruits in small quantities to ensure as many vitamins as possible. From strawberries and raspberries to blackberries, blueberries and kiwis, the supermodel sources all these ingredients from her very own organic vegetable garden.


(Rules 3 ) Superfood meals
Eighty percent of the family's diet is composed of organic vegetables and wholegrains, namely brown rice, quinoa, millet and beans which are cooked in natural coconut oil. On top of this, food products containing white sugar and white flour are banned from the house. "Today, I love the principle that 'the body is like a temple', and that by loving and nourishing our bodies, we can improve how we feel. My favorite homemade recipe is a dish split into seven portions, with kale, broccoli, quinoa, avocado, beetroot, sweet potato and cherry tomatoes. It works just as well for lunch as it does for the afternoon or during a hectic evening."


(Rules 4 ) Red meat in moderation
"We don't eat nearly as much red meat as we used to; maybe once a month now. We mainly eat fruit, vegetables, grains, seeds, nuts, fish and organic chicken." When the family do eat meat, it's lean meat: organic steak, duck and chicken. In terms of fish, family chef Allen mostly cooks wild salmon.


(Rules 5 ) Early dinner
Eating dinner between 5:30pm and 6pm allows you to have an early night, and gives your body plenty of time to digest your meal so that your stomach can rest while you sleep. By doing this, during the early hours your body will be light and cleansed. The supermodel has followed this routine for a long time, helping her maintain her envy-inducing lean, toned body from the moment she wakes up.


(Rules 6 ) A cleanse twice a year
A detox cure, as the seasons change.  "I try to pair my detox cure with a silent retreat, as it's the perfect way to put your body and mind at rest for a weekend. I feel like this physical and mental detox even helps to boost my immune system, as I never get sick anymore."

朝食向きサラダ – イエイ!


いいえ、クレイジーになったわけではありません。実際、今やサラダは朝食の最大トレンドの一つ。 それにはちゃんとした理由もあるのです。 なぜ一日の始まりにはサラダが一番なのか?

朝食は一日で最も大切な食事で、コーヒーと同じように良い目覚ましになるわ。 朝から緑の野菜を食べるのは直感的ではないかもしれないけど、一日をスタートするこの革命的な方法がきっとヤミツキになるわよ。 辛味のあるグリーンと柔らかい卵は、ブルーな月曜の朝に対抗する私のお気に入り。 クリエイティブにトッピングして、トロトロ卵と必要ならトーストもお忘れなく。 ハッシュブラウン抜きの健康的な朝食よ。 



ピスタチオ、パルミジャーノ、ポーチドエッグの朝食サラダ(2人分)


辛味のあるミックスグリーン(またはベビーリーフ) 約142g
紅芯大根(またはラディッシュ類) 2個 薄くスライスしておく
焙ったピスタチオ 約71g 乱切り
ケールのマイクログリーン 手のひら1杯
パルミジャーノ・レッジャーノ(またはペコリーノ) 約57g すりおろしておく
エクストラバージン・オリーブオイル 大さじ2/3
レモン 1/2個 果汁を搾る
卵 大2個
蒸留ホワイトビネガー 大さじ1~2
アボカド 1/2個 スライスしておく
海水塩 調味用
挽きたてのコショウ
大きいミキシングボウルに、グリーン、ラディッシュ、ピスタチオ、マイクログリーン、パルミジャーノ・レッジャーノを入れる。 オリーブオイルとレモン汁を回しかけて、手を使ってよく混ぜ合わせる。 海水塩と挽きたてのコショウで味付けする。


ポーチドエッグ:
大きいソースパンに水を張り、ホワイトビネガーを加える。  強火にかけて小さな泡が縁に出るまで加熱する。
卵(もし気になるなら一度に一個づつ)を落とし入れる。 30秒ほどそのままにしておき、その後ゆっくりと(円を描くように)混ぜて卵白が卵黄の回りを包むようにする。 もし卵が鍋底にくっついても、シリコンのヘラで気を付けて取れば大丈夫。 ときどきかき混ぜて、卵白が固まり始め透明でなくなるまで火を通す。
穴あきスプーンで取り出して水を切り、卵を各皿に加える。 スライスしたアボカドと共にトッピングして、手早く食卓に出す。

CHEF KATE'S PUMPKIN 'PIE' HARVEST SOUP WITH PUMPKIN SEEDS (International Version)


There are always rave reviews about this delicious, colourful soup! It was inspired by Miranda’s grandfather, ‘Pa’ Kerr. When I was staying with her parents, John and Therese, Pa brought us a lot—I mean a lot—of pumpkins he had grown himself in Gunnedah. It is the perfect thing to have on cool winter evenings to warm you up from the inside.
SERVES 4–6
For a fun and festive twist, serve the soup in a medium size pumpkin or a few individual small pumpkins. Carefully cut the top off the pumpkin (reserve top for serving) and scoop out the seeds and pulp. Set the pumpkin aside or refrigerate until needed.
PREP TIME 10 minutes (longer if cooking pumpkin)
COOKING TIME 5 minutes (for reheating soup)
You can steam, boil, or roast the pumpkin. Roasting the pumpkin takes the longest; approx. 35–45 minutes. It’s worth the extra time because it caramelises and brings out the flavours of the pumpkin. You can roast the pumpkin seeds or leave them raw if you like when serving the soup.
NOTE Always be careful when blending hot ingredients. If you are cooking the pumpkin yourself, allow it to cool for at least 10 minutes before blending.
TIP When I cook pumpkin I usually make extra and freeze it in ½ cup and 1 cup portions for using in soups, pancakes, and desserts.


Ingredients
  • 1½ cups cooked pumpkin or squash
  • 1½ cups vegetable stock or water (or water from cooking the pumpkin)
  • 1 cup coconut milk (or milk of choice)
  • 1 tsp cinnamon (to taste)
  • 3–4 tbsp honey, coconut syrup, or maple syrup (to taste)
  • Raw or roasted pumpkin seeds (for serving)
  • ½ cup coconut milk (for serving—optional)
  • Fresh thyme, cilantro (coriander) or parsley (for serving)


  • Method
    1. Combine all ingredients in a food processor fitted with the chopping blade. You may need to process the soup mixture in 2 batches depending on the size of your machine. You can also make the soup in the blender, but be sure to blend in 2 batches and add a little more coconut milk or water if needed while blending.
    2. Check for seasoning and add more salt and sweetness if desired. Gently reheat and serve the soup, or it can be refrigerated to reheat later.
    3. Serve with a few raw or toasted pumpkin seeds, a little swirl of coconut milk, and a sprig of fresh thyme, cilantro (coriander), or parsley. The soup will keep for 4 days refrigerated and up to 1 month in the freezer.

Why Green Tea? (International Version)


Miranda is often quoted as a fan of drinking Green Tea for its numerous health and wellness benefits, but it's also one of the key ingredients she identified to be used in the KORA Organics range, along with Noni Fruit Extract, Rosehip Oil and Vitamins A, C & E.
