Cajun Chicken Salad with Avocado Ranch Dressing

Delicious and mouthwatering veggies salad.  Topped with cajun chicken that adds a little bit of heat and creamy avocado ranch helps to cool it down.  This is one incredible salad!

Rub some cajun seasoning on my chicken and throw it on the grill.

This avocado ranch turned out fantastic.added some avocado, sour cream, mayonnaise and buttermilk.It was the perfect finishing touch to the salad.  It was tangy and creamy and added so much flavor.

Ingredients
  • 2 boneless skinless chicken breasts
  • 1 Tablespoon McCormick® Cajun Seasoning
  • 4 cups fresh romaine, chopped
  • 1 cup cherry tomatoes, chopped
  • 1 cucumber, sliced
  • ¼ cup red onion, diced
  • ¼ cup crumbled feta cheese
  • Avocado Ranch:
  • 1 ripe avocado
  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • ¼ cup buttermilk
  • 2 teaspoons white vinegar
  • ¼ teaspoon McCormick® Dill Weed
  • ¼ teaspoon McCormick® onion powder
  • ¼ teaspoon McCormick® Garlic Powder
  • ½ teaspoon McCormick® dried parsley
  • ⅛ teaspoon salt
Instructions
  1. Season each side of the chicken breast with Cajun Spice. Grill the chicken until cooked throughout and no longer pink. Chop and set aside.
  2. Combine romaine, cherry tomates, cucumber, and red onion in a large bowl. Add the chopped cajun chicken and toss.
  3. To make the avocado ranch: Combine avocado, mayonnaise, sour cream, buttermilk, vinegar, dill weed, onion powder, garlic powder, dried parsley, and salt in a food processor. Pulse until smooth and creamy. Serve over salad.
