Healthier Taco Pasta

HEALTHIER TACO PASTA is made in just under 30 minutes and is DELICIOUS!

Healthier Taco Pasta

8-12 oz. large shell pasta (or other type of pasta)
3/4 Lb. lean ground beef or ground turkey
1 packet of taco seasoning
1/4 tsp. cumin
1/4 tsp. onion powder
pepper, to taste
1 Tbl. brown sugar, opt.
1/2 c. hot pasta water 
1 can low-sodium black beans, drained and rinsed
1 can mild Rotel, un-drained
1 heaping cup low-fat cottage cheese
2 Tbl. chopped cilantro

(1) Cook pasta according to package directions; reserving 1/2 cup hot water. (2) Meanwhile, brown ground beef or turkey in a large skillet over medium heat.  
(3) Add the taco seasoning, cumin, onion powder, some black pepper and brown sugar.  
(4) Carefully add 1/2 cup of the hot pasta water to the skillet and stir to combine; allow to simmer for a few minutes.  It should be thickened at this point.  
(5) Stir in the beans, Rotel, cottage cheese and cilantro.  Continue to heat over medium heat and add the drained, cooked pasta.  
(6) Stir until pasta is evenly coated in sauce.  The sauce should be thick and creamy, but if it isn't, simmer for a few minutes until thickened.  
(7) Serves 4-5.

Taco Braid

 Make this Taco Braid with Zaycon Fresh 93 / 7 Super Lean Ground Beef. Season it with taco seasoning, cover with shredded cheese and tomatoes and wrap it all up in a braided pizza dough. It’s a fun and different way to eat a taco!

Ingredients

• 1 canister refrigerated pizza crust
• 2 tablespoons olive oil
• 1/2 cup chopped onion
• 1 lb. Zaycon Fresh 93 / 7 Super Lean Ground Beef
• 3 tablespoons Homemade Taco Seasoning
• 1/2 cup water
• 1 cup Fiesta Blend shredded cheese, divided
• 1 tomato, diced, plus additional for top, if desired
• 2 tablespoons unsalted butter, melted
• 2 cups chopped Romaine lettuce
• Sour cream and taco sauce for serving, if desired

Instructions

1. Prepare a rimmed baking sheet by lining it with parchment.
2. Preheat oven to 375 degrees F.
3. in a large skillet heat the olive oil over medium heat.
4. Add the chopped onion and cook until soft, about 3 - 5 minutes.
5. Add the Zaycon Fresh 93 / 7 Super Lean Ground Beef and cook until brown.
6. Add the Homemade Taco Seasoning and water and mix until well incorporated.
7. Reduce heat to low and simmer for 5 - 7 minutes.
8. Meanwhile, transfer the piece of parchment to your work surface.
9. Place the pizza dough on the parchment and roll it so that it measures 10 X 15 - inches.
10. With a pizza cutter, make slices 1 1/2 - inches thick and 3 - inches in along both long sides of the dough.
11. Place the ground beef down the center of the dough.
12. Cover the beef with 3/4 cup of cheese and then add the diced tomato.
13. Beginning at one end of the braid, fold the end up and wrap the first two slices over to secure it.
14. Repeat the wrapping with the remaining slices just until the last two.
15. Fold the remaining end up and wrap the last two slices over it to secure.
16. Gently brush the top and side with the melted butter.
17. Sprinkle the remaining 1/4 cup of cheese on top.
18. Transfer the parchment on to the rimmed baking sheet.
19. Bake for 20 - 25 minutes, until golden brown.
20. Allow to cool for 5 minutes before serving.
21. Cover with chopped Romaine lettuce and additional tomato, if desired.
22. Serve with sour cream and taco sauce.

Homemade Taco Seasoning

Ingredients

• 4 tablespoons chili powder
• 5 teaspoons cumin
• 4 teaspoons salt
• 4 teaspoons beef bouillon
• 4 teaspoons corn starch
• 4 teaspoons freshly ground black pepper
• 2 teaspoons garlic powder
• 2 teaspoon onion powder
• 2 teaspoons paprika
• 1 teaspoon oregano

Instructions

1. In a medium bowl, whisk together all ingredients.
2. Store in an airtight container.

Notes
Recipe makes just under 11 servings when using 3 tablespoons per pound of meat.

Jumbo Chocolate Chip Cookies  

INGREDIENTS 

2 1/4 cups flour 
2 teaspoons cornstarch 
1 teaspoon baking soda 
1/2 teaspoon salt 
3/4 cup butter, room temperature 
3/4 cup brown sugar 
1/2 cup granulated sugar 
1 egg 
1 teaspoon vanilla 
1 1/2 cups chocolate chips

DIRECTIONS 
(1) Preheat oven to 350° and line 2 sheet trays with parchment paper. Set aside. 

(2) In a small bowl, combine flour, cornstarch, baking soda, and salt. Stir and set aside. 

(3) In a large bowl, combine butter, brown sugar and granulated sugar. Mix until fully combined. 

(4) Add in the egg and vanilla and mix well. 

(5) Stir in the flour mixture and mix until no dry pockets remain. 

(6) Fold in the chocolate chips. 

(7) Measure dough into 1/2 cup portions using a measuring cup. It should make 6 large cookies. Roll balls so they are smooth and place 3 on each sheet. 

(8) Bake 1 tray at a time, for 17-18 minutes. They will still be soft when they come out so let them cool on the sheet tray for 5-10 minutes. 

Servings: 6
